Ingredients
  

  • 2 lbs boneless, skinless chicken breast
  • 1 lb sweet potatoes, peeled and cubed
  • 1 lb carrots, peeled and sliced
  • 1 lb green beans, trimmed
  • 1/2 lb peas (frozen or fresh)
  • 1/4 cup olive oil

Instructions
 

  • Cook the Chicken: Cut the chicken breast into small, bite-sized pieces. Cook in a large pot over medium heat until the chicken is cooked through (about 10 minutes). Remove the chicken and set aside.
  • Cook the Vegetables: In the same pot, add the sweet potatoes and carrots. Add enough water to cover the vegetables. Bring to a boil and then reduce heat to simmer. Cook until the vegetables are tender (about 15 minutes).
  • Add Green Beans and Peas: Add the green beans and peas to the pot. Cook for an additional 5 minutes.
  • Combine Ingredients: Return the cooked chicken to the pot with the vegetables. Stir in the olive oil and mix well.
